{"id":4728,"date":"2024-05-06T16:21:11","date_gmt":"2024-05-06T19:21:11","guid":{"rendered":"https:\/\/orvedbrock.com.br\/es\/?post_type=novidades&#038;p=4728"},"modified":"2024-09-26T14:16:23","modified_gmt":"2024-09-26T17:16:23","slug":"desmenuzar-pollo-coccion-sous-vide","status":"publish","type":"blog","link":"https:\/\/orvedbrock.com.br\/es\/blog\/desmenuzar-pollo-coccion-sous-vide\/","title":{"rendered":"Desmenuzar el pollo despu\u00e9s de la cocci\u00f3n Sous Vide"},"content":{"rendered":"\n<p>Decidimos juntar dos de las l\u00edneas que fabricamos para realizar una prueba: cocinamos pechuga de pollo en nuestros <a href=\"https:\/\/orvedbrock.com.br\/es\/line\/termocirculadores-profesionales\/\" target=\"_blank\" rel=\"noreferrer noopener\"><strong>termocirculadores profesionales para sous vide<\/strong><\/a> y despu\u00e9s la llevamos a nuestras <a href=\"https:\/\/orvedbrock.com.br\/es\/categoria\/meat-and-chicken-shredders\/\"><strong>desmechadoras patentados DFC Line<\/strong><\/a>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Objetivo de la prueba<\/h2>\n\n\n\n<p>Llevamos a cabo este procedimiento para ayudar a nuestros clientes propietarios de nuestras m\u00e1quinas.<\/p>\n\n\n\n<p>Como sous vide es una t\u00e9cnica en la que el producto se cocina a una temperatura m\u00e1s baja que la tradicional, el producto pierde mucho menos peso que en el m\u00e9todo tradicional.<\/p>\n\n\n\n<p>Al mismo tiempo, el logro de una trituraci\u00f3n perfecta en nuestras trituradoras de la l\u00ednea DFC depende en gran medida de la p\u00e9rdida de col\u00e1geno de las fibras de pollo.<\/p>\n\n\n\n<p>Por lo tanto, realizamos esta prueba cocinando la pechuga de pollo a 70\u00b0C durante dos horas para comprobar si el resultado final de la trituraci\u00f3n ser\u00eda bueno.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Resultado de la prueba<\/h2>\n\n\n\n<p>Despu\u00e9s de cocinarla durante dos horas en nuestro termocirculador TC Line que estaba ajustado para cocinar a 70\u00baC, la sacamos del envase sous vide y la pesamos. Teniendo en cuenta que en la t\u00e9cnica de cocci\u00f3n tradicional el pollo pierde de media un 34%, \u00a1nosotros tuvimos una <strong>impresionante reducci\u00f3n de p\u00e9rdida del 26%<\/strong>!<\/p>\n\n\n\n<p>En cuanto al resultado del desmenuzado, nos dimos cuenta de que algunas fibras a\u00fan estaban pegadas a las otras, por lo que el resultado no fue el desmenuzado perfecto (para conseguir el desmenuzado perfecto la temperatura de cocci\u00f3n en el sous vide debe ser de 77\u00baC), pero fue un desmenuzado que consideramos de buena calidad, <strong>con una puntuaci\u00f3n de 7 sobre 10<\/strong>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Conclusi\u00f3n<\/h2>\n\n\n\n<p>Esta prueba demostr\u00f3 que la combinaci\u00f3n de la t\u00e9cnica sous vide con nuestros desmenuzadores puede ser una <strong>excelente manera<\/strong> para que nuestros clientes aumenten el rendimiento del pollo desmenuzado, ya que como se coment\u00f3, hubo una reducci\u00f3n de la p\u00e9rdida en la cocci\u00f3n de aproximadamente un 26%.
