tabla anterior, estos dos datos var\u00edan mucho de un producto a otro.<\/p>\n\n\n\n<p>La <strong>temperatura<\/strong> var\u00eda porque la temperatura de cocci\u00f3n cambia en funci\u00f3n del tipo de alimento. Por ejemplo, las verduras tienen una temperatura de cocci\u00f3n m\u00e1s alta que las prote\u00ednas.<\/p>\n\n\n\n<p>El <strong>tiempo<\/strong> indicado es el tiempo en el que el centro del producto alcanzar\u00e1 la temperatura establecida, por lo que cuanto m\u00e1s grueso o duro sea el alimento, m\u00e1s tiempo tardar\u00e1 en cocinarse en sous vide. La dureza puede variar incluso entre diferentes partes del mismo tipo de prote\u00edna.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">El grosor del producto interfiere en el tiempo<\/h3>\n\n\n\n<p>Utilizamos el grosor est\u00e1ndar de los productos presentados, pero puede variar en funci\u00f3n del corte que vayas a utilizar. Por ejemplo, si utiliza una pechuga de pollo con un grosor superior a la media, deber\u00e1 dejarla m\u00e1s tiempo en el termocirculador. As\u00ed que tenga cuidado de no dejar partes en las que la cocci\u00f3n no se haya realizado completamente en el sous vide.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Control del punto de cocci\u00f3n<\/h3>\n\n\n\n<p>Una ventaja muy agradable de sous vide es que puede controlar con precisi\u00f3n el punto final de los alimentos. Puedes dejar una carne poco hecha, a t\u00e9rmino medio o bien hecha, t\u00fa decides. En este caso lo que variar\u00e1 ser\u00e1 la temperatura elegida. Por ejemplo, un filete a 57\u00baC es t\u00e9rmino medio, si estuviera a 54\u00baC ser\u00eda poco hecho, y a 61\u00baC estar\u00eda bien hecho.
