Esto sucede porque cada producto tendr\u00e1 un tiempo de cocci\u00f3n diferente.<\/p>\n\n\n\n<p>Tampoco podemos decir que para un mismo producto el tiempo de cocci\u00f3n ser\u00e1 el mismo, ya que el tiempo de cocci\u00f3n depender\u00e1 del grosor del producto. Esto se debe a que en el proceso sous vide tenemos que asegurarnos de que el centro del alimento alcanza la temperatura de cocci\u00f3n que se defini\u00f3 previamente.<\/p>\n\n\n\n<p>Bien, ahora que entiende por qu\u00e9 var\u00edan los tiempos de cocci\u00f3n, vamos a explicarle c\u00f3mo funciona el c\u00e1lculo de la producci\u00f3n.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Entender los c\u00e1lculos<\/h2>\n\n\n\n<p>El c\u00e1lculo de producci\u00f3n depender\u00e1 de la capacidad del termocirculador y del tiempo de cocci\u00f3n de los productos. Nuestro termocirculador profesional <a href=\"https:\/\/orvedbrock.com.br\/es\/professional-sous-vide-machine\/thermocirculator-tc-50\/\">TC 50<\/a> tiene una capacidad de 13 kg por ciclo, mientras que nuestro <a href=\"https:\/\/orvedbrock.com.br\/es\/destaque\/thermocirculator-tc-100\/\">termocirculador<\/a> profesional <a href=\"https:\/\/orvedbrock.com.br\/es\/destaque\/thermocirculator-tc-100\/\">TC 100<\/a> tiene una capacidad de hasta 20 kg por ciclo.<\/p>\n\n\n\n<p>Tomemos el ejemplo del bacalao, tiene un tiempo de cocci\u00f3n de 30 minutos, es decir, en el TC 50 har\u00edamos cada 30 minutos 13kg de bacalao, y en el TC 100 hasta 40kg. Esto dar\u00eda una producci\u00f3n horaria de 26kg y 80kg respectivamente.<\/p>\n\n\n\n<p>Ahora tomemos un producto con un tiempo de cocci\u00f3n m\u00e1s largo, como las costillas de cordero, que tienen un tiempo de cocci\u00f3n de 24 horas. En la TC 50 se har\u00edan unos 13kg en 1 d\u00eda, mientras que en la TC 100 ser\u00edan 20kg.
