We have developed this article to answer the main questions related to our DFC Line chicken and meat shredders. If you are interested in our equipment and have any questions, this article will most likely be useful to you.
No. As our patented system correctly separates the fibers, the process of grating cheese would not work, as cheeses do not have fibers.
Yes. In addition to beef and chicken, you can also use our shredders to shred other proteins, such as pork (the machine can be used to make the famous pulled pork), fish (such as codfish for example, widely used to make dumplings and other Portuguese savory snacks) etc.
All the models we manufacture can be used to shred these products and the end result will be the same. The difference between one model and another will only be the production.
No. Our equipment correctly separates the fibers, and for this to be possible it is necessary that the product has been cooked previously, because it is in this way that the fibers lose the collagen (glue) between them, thus allowing them to be separated.
Yes, and this is ideal. The suggested process for shredding is right after cooking already take the protein to our shredders, where the shredding will be done instantly. And if the product is taken cold, the final result will not be the perfect shredded, as some fibers will stick together again.
No. The system has a single speed, always sufficient for the fibers to be separated correctly and thus achieve the perfect shredding.
As the objective of the system is to correctly separate the fibers to achieve the perfect shredding, the size of the shredding (width, length and thickness) will always be proportional to the size of the product fibers. However, there are some ways to simulate a smaller and even thicker shredding.
To achieve a smaller shredding (in length) you can previously cut the product (in a direction perpendicular to the direction of the fibers) into smaller sizes. Thus, you will cut the fibers and when they are separated the size of the shredding will consequently be smaller.
To achieve a thicker shredded product, you can cook your product for a shorter time than suggested. In this way, the fibers have not completely lost the collagen between them, some will be attached to the others, which will simulate a “thicker shredded”.
We address this question more fully here.
Yes. The parts of the equipment are removable to make cleaning more practical, and it is possible to use running water in the shredding system. They are all made of AISI 304 stainless steel, so there is no risk of oxidation. The average time it takes to clean the equipment is 5 to 15 minutes.
A very interesting feature of our equipment is that they have no natural wear parts. This way you will not have to worry about changing parts from time to time.
Yes, the equipment has sensors and other safety systems. In Brazil the DFC Line is certified by NR 12, which is a very strict safety standard.
