Choosing the right vacuum machine for Sous Vide

The sous vide process is based on cooking a vacuum-packed product in water at a controlled temperature. Vacuum sealers are therefore considered the basic equipment for this process.

We’ll cover the main information you need to pay attention to in order to choose the right model for this cooking technique.

1. Using chamber vacuum machines

For home use, a nozzle vacuum machine can be an interesting choice, but when it comes to sous vide production, we have products that release a lot of residue, such as meat that releases fat and blood.

Because of the sensitivity of nozzle vacuum machines to these residues, a vacuum machine from the chamber line is suggested and ideal.

1. largest product to be packaged

Define whether whole pieces will be cooked or portioned. This is important information because you need to ensure that the machine can pack your largest piece.

This also applies if you are going to pack several products in the same package. For example, if you want to pack 3kg of chicken wings in the same package, it’s important to get a vacuum machine that has the capacity to pack 3kg.

2. Broths/sauces/pastas will be packaged

Sous vide is a sensational technique that has a lot of versatility. You can use this technique to work with more liquid products, such as broths, soups, etc.

If you are thinking of working with these products, in packages of 500ml or more, we suggest purchasing a vacuum machine with a cavity for when you need to pack these products in larger volumes.

3. Productivity

You should bear in mind the production capacity of the vacuum machine and whether it will meet your demand for the sous vide technique.

It’s important to note that because it’s a slow-cooking technique, food will take longer to be vacuum-packed. The bottleneck is cooking, not the vacuum-packing process.

So, in general, a compact model (as long as it takes care of the largest packaging, as per the previous item), would already be able to handle production for the products that will be cooked sous vide.
