Production of Professional Thermocirculators – TC Line

In this article we’ll talk more about the production capacity of our Professional Thermocirculators for the sous vide technique. A bottleneck that used to exist for this type of equipment is low productivity, making it necessary to purchase several machines to meet production requirements.

Our TC Line includes equipment with a capacity of up to 250 liters and has several differentials to guarantee maximum efficiency in this technique, making it equipment for professional and industrial use.

Understanding Productivity in Sous Vide

This is a technique in which the product is vacuum-packed and then placed in temperature-controlled water, where the cooking will take place. As the aim is for the center of the food to reach the desired temperature, this will vary depending on the different types of food.

For example, tougher meats will require more cooking time – as it will take longer for the center to reach the desired temperature – while softer meats will require less time. The thickness of the meat/food will also influence this time.

It is important to make these observations in order to understand that for sous vide thermocirculators we are not talking about production per time, but production per cycle. And this cycle, as mentioned above, will change from one type of food to another (check out our basic table here).
