Well, this is what you have to know to understand why our shredders do not regulate the size of the shreddings. This is because the patented system they use allows the fibers to separate correctly, which is quite different from breaking them into predefined sizes. So, the size of the shred will always be proportional to the fiber size of the food.
This implies that products with smaller fibers will have smaller shreds. An example of this is to compare chicken breast with chicken fillet. If you shred the breast, the fiber will be much larger compared to the fiber in fillet.
So whenever you think about the size of the shredding, think about what the size of your protein fibers are and you’ll get the answer.
As mentioned above, our equipment doesn’t regulate the size of the shredding, because if it did, it would have to break the fibers and thus it would no longer be the perfect shredding. The way to solve the size of the fibers is simpler than it sounds: cut your protein to the size you want your fibers to be.
For example, if you are finding the fiber size of the chicken breast too large, just cut the chicken breast in half and the shredded meat will now be half the size. Another example is beef shredding, where you can cut the piece into pieces where the shredding suits you.
And don’t forget, to regulate the size, you must cut the piece of meat perpendicular to the direction of the fibers.
