Shredding Chicken Breast Cooked in a Combi Oven

Shredding chicken breast in our DFC Line of Chicken and Meat Shredders is very simple. The process consists of cooking the breast (boneless) and then immediately placing it in our equipment.

Below we will explain each step of the shredding process using the combined oven cooking method.

1. Cooking in a combi oven

The correct cooking of chicken breasts, as well as other proteins, is essential if the shredding is to take place correctly and the perfect shredding is to be achieved. The most commonly used cooking method is in industrial cauldrons, and the second most commonly used method is in combi ovens.

The suggested configuration for combi ovens is as follows:

  • Temperature: 120ºC
  • Humidity: 100%
  • Time: 30 minutes

High humidity is essential so that the fibers don’t lose their characteristics, damaging the quality of the final shredded product.

2. Taking it to our shredders

Immediately after cooking, we suggest that you take the brisket to our shredders. Ideally, you should always take the chicken breast, like other proteins, hot to the machines.

As soon as the chicken breast is placed in our shredder, it is instantly shredded. As you can see in the video at the top, the fibers are separated in just the right way to achieve the best possible shredding.
