Among the types of meat most shredded by our shredder customers, chicken is the absolute champion. Among the main shredded parts of chicken, the two most commonly used are chicken breast and chicken fillet.

In this article we’ll look at the objective differences between these two cuts so that you can better define which one is best for your business.

Properties of shredded chicken

The result of shredding chicken breast and chicken fillet is quite different, as the fibers have different dimensions. Because it is a larger piece, chicken breast ends up having a longer and slightly thicker shredding, while sassami has a smaller and thinner shredding.

These differences will influence the purpose of the shredding. If you want the shredded chicken to stand out more, chicken breast is better. If the shredded chicken is just a complement to the dish and not the star, sassami makes more sense.

Another point is in relation to the size of the products that will use the shredded chicken. If you intend to stuff large products, such as pizzas, pastries, large drumsticks or pies, shredded chicken breast will suit you best. Otherwise, if the products are small, such as mini drumsticks, the fillet will better meet the need.

Cooking times

Our DFC Line chicken and meat shredders use a system that manages to separate the fibers correctly, and for this they need to be cooked beforehand. The cooking time is generally proportional to the size of the meat.

Thus, the cooking time for chicken fillet is shorter than that for chicken breast. Using boiling water as an example, we suggest 1:30 hours for the fillet and 2:00 hours for breasts.

Cost of cuts

This is also a key point when deciding whether to use chicken breast or fillet, as it will have a direct impact on costs and business viability.

In some regions, there are substantial differences between the two, of more than 20%. However, the prices of these cuts vary greatly, with chicken breast being more economical in some regions and fillet in others.

Which factor is more important?

This is our suggestion to our DFC customers (chicken and meat shredders). We believe that of the three main factors, the most important is the property of the shredding you are looking for and for what purpose.

Although cost and cooking time are important, we believe that the cost-benefit ratio of delivering the ideal shredded product for the right purpose is much more advantageous than the other points.
